Cilantro Lime Chicken

Tender and juicy chicken with bright flavors! If you aren't a fan of cilantro, it can be left out and this dish will still taste fantastic! Delicious hot or cold, and wonderful served with rice, beans, or shred the chicken and make some delicious tacos!

Ingredients
  

  • 2 individual boneless, skinless chicken breast
  • 3-4 individual limes to your preference
  • 4 cloves garlic minced
  • 1-2 Tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper or less if you prefer less spice
  • 1/4 cup cilantro minced (optional)

Instructions
 

  • Cut chicken breasts into 2x2-inch peices, or to desired size. Place into ziplock bag or bowl and set aside.
  • On a clean cutting board, mince garlic and cilantro, keeping separate, and set aside. Cut 2-3 limes in half.
  • In a small mixing bowl, combine half of the olive oil, juice of 2 whole limes, minced garlic, ground cumin and cayenne pepper.
  • Pour the flavoring mixture over the chicken. Cover and refrigerate for at least 20 minutes, and up to 4 hours.
  • Once the chicken is finished marinating, heat remaining oil in a skillet over medium-high heat. You will know the skillet is hot enough when a droplet of water simmers.
  • Add the marinated chicken to the hot oil. Cook 2-4 minutes or until lightly browned.
  • Once the bottom is browned, turn and cook another 2-3 minutes or until browned. (It is highly suggested to use a kitchen thermometer to test the chicken to be sure it is cooked to 165 degrees Farenheit)
  • Carefully squeeze half of a lime over the chicken in the pan. Quickly stir to scrape the bits from the bottom of the pan. Remove chicken and any loosened bits from heat.
  • Place chicken on serving dishes and top with minced cilantro. Serve with slices of remaining lime.
